Spanish Gardens Reuben Tacos

This Mexican twist on an Irish classic will blow your mind!

Ingredients:

1/2 head red cabbage (thinly shredded) 
3/4 cup apple cider vinegar
1/4 cup apple cider
1 1/2 tsp caraway seeds
2 tsp Spanish Gardens Taco Seasoning
1 tsp kosher salt
corned beef (store-bought or cooked at home, following the package directions)
1/2 cup mayo
2 tbsp Spanish Gardens Taco Sauce (you choose the spice level)
flour tortillas

Instructions:

Combine the cabbage, apple cider vinegar, apple cider, caraway seeds, Spanish Gardens Taco Seasoning, and kosher salt in a large bowl, cover tightly with cling wrap, and microwave for 4 minutes. Let the mixture sit and cool for 15 minutes, then refrigerate until chilled.

If you have store-bought corned beef, bake at 350° until hot. If you are making your own corned beef, follow the package directions, then let cool slightly and slice for a sandwich.

Combine the mayo and Spanish Gardens Taco Sauce and whisk until smooth.

Build your tacos, starting with the tortilla, then your red cabbage kraut, sliced corned beef, Spanish Gardens Taco Sauce mayo, then finish with more kraut.
