Spanish Gardens 7 Layer Dip & Tortilla Chips

The ultimate party food, done Spanish Gardens style.

Ingredients:

1/2 yellow onion, diced
2 garlic cloves, diced
1 can black beans
1/2 can chicken stock or water
3 tsp Spanish Gardens Taco Seasoning, divided
3 avocados, smashed
1 jalapeño pepper seeds removed & finely diced
1 small red onion, finely diced
1/3  bunch cilantro, diced
1/2  cup sour cream, divided
2 tsp fresh lime juice
1 tsp. salt
2 tbsp Spanish Gardens Spicy Taco Sauce
1/4 cup Spanish Gardens Taco Sauce
1 cup shredded cheddar and jack cheeses, mixed
1 cup diced tomatoes (we used cherry tomatoes)
1/2 can black olives, sliced
Tortilla Chips for dipping


Instructions:

Make the black beans: saute onion until it starts to caramelize, then stir in garlic and cook for 1 minute more. Add the entire can (liquid included) of black beans to the pan, plus another half-cans worth of either water or stock, 2 tsp Spanish Gardens Taco Seasoning, and salt  & pepper. Bring to a simmer and let it cook down for a while, stirring occasionally and mashing with a spatula or the back of a wooden spoon, until thickened, with some broken down beans but still pretty chunky. Let cool.

Make the guacamole: combine avocado, jalapeño, red onion, cilantro, ¼ cup sour cream, lime juice, and Spanish Gardens Spicy Taco Sauce. Mix well and season with salt & pepper to taste.

Make sour cream mix: combine the remaining ¼ cup sour cream and 1 tsp Spanish Gardens Taco Sauce. Add salt & pepper to taste.

Layer the dip: carefully spread a layer of the black beans to the bottom of your serving dish, making sure to keep it even. Then add a layer of guacamole, spread evenly, then sour cream. Top with cheeses, then tomatoes, then black olives. We finished ours with micro cilantro, but regular cilantro or green onions would work great!

Serve it up with LOTS of Spanish Gardens Tortilla Chips and wow your friends!
