Spanish Gardens Halloween Chili Nachos

Trick or treating is really hard work. Your little ghouls will be full and ready to spook all night long after eating our Chili Nachos!

Ingredients:

1 tablespoon olive oil
1 red onion diced
1 red bell pepper diced
2 garlic cloves minced
2 pounds lean ground beef
2 cups beef broth
1 15 ounce can of diced tomatoes
1 15 ounce can of black beans, drained & rinsed
1 15 ounce can kidney beans, drained & rinsed
3 tbsp Spanish Gardens Taco Seasoning
1 teaspoon cumin
1 teaspoon salt
Spanish Gardens Tortilla Chips
shredded cheddar cheese 
queso fresco
pickled jalapeño
cilantro


Instructions:

In a large pot heat the olive oil over medium-high heat and add the onion & bell pepper and sauté until translucent. Add the garlic and cook for a minute. Remove veggies from the pot.

Crumble in the ground beef in the same pot, breaking up the beef into small pieces as it cooks. When the meat is browned and fully cooked, add the veggies back to the pot.

Add in the beef broth, diced tomatoes, black beans, kidney beans, Spanish Gardens Taco Seasoning, cumin, & salt.

Bring to a boil and reduce to a simmer until it starts to thicken and flavors combine for about 1 hour.

Spread a layer of Spanish Gardens Tortilla Chips over a large plate or platter. Pour a generous portion of the chili over the chips, making sure to evenly cover all the surfaces. Finish with shredded cheddar cheese, queso fresco, pickled jalapeño, and cilantro. Serve to your little monsters and send them out to trick or treat with full tummies!
