Spanish Gardens Sweet Potato Tacos

Vegetarian tacos with tons of flavor and Spanish Gardens, of course.

Ingredients:

2 sweet potatoes (peeled and cubed)
3 tsp Spanish Gardens Taco Seasoning
2 tsp olive oil
kosher salt
1 bag broccoli slaw mix
1 small red pepper (matchstick sliced)
1/4 cup lime juice
2 tbsp honey
2 tbsp olive oil
1 tsp garlic powder
1 tsp cumin
1/2 tsp smoked paprika
1 can refried black beans (warmed)
queso fresco
cilantro
Spanish Gardens Taco Sauce (mild, hot, or extra hot, depending on your taste)


Instructions:

Toss sweet potato cubes in 2 tsp olive oil and Spanish Gardens Taco Seasoning, spread evenly on a sheet pan, and bake at 400° for 10-15 minutes until the potatoes start to crisp.

Combine lime juice, honey, 2 tbsp olive oil, garlic powder, cumin, and smoked paprika in a small bowl and whisk until smooth. Add broccoli slaw and peppers, use tongs to toss and coat.

Using your favorite tortilla, spread about 2 tsp of black beans over the bottom, add sweet potatoes, slaw, queso fresco, and cilantro to taste. Make sure to add plenty of Spanish Gardens Taco Sauce and dive in!

*note - you can make these vegan by leaving off the honey (replace with agave nectar) and cheese; they would be just as delicious!
