Farmers Market Quesadillas

Take advantage of the summer bounty with these Spanish Gardens seasoned quesadillas. So good your family will never guess they are healthy too!

Ingredients:

1 tbsp olive oil
1 small sweet potato, diced
1 small red onion, diced
1/2 red bell pepper, diced
1 small zucchini, diced
1 small yellow squash, diced
1 tbsp Spanish Gardens Taco Seasoning
1/2 cup jack & cheddar cheese mix
2 large flour tortillas
1 avocado, sliced for garnish
Spanish Gardens Taco Sauce (heat of your choice)

Instructions:

Heat the olive oil in a saucepan until hot, then add the onion. Cook for 1 minute, then add the sweet potato and red bell pepper. Saute for 2-3 more minutes more, then add the zucchini and squash. Once everything is hot and cooked, take off the heat.

Place one tortilla in a large saucepan, add 1/2 the cheese and 1/2 the veggie mixture. Top with the remaining cheese and the second tortilla. Cook over medium heat until the cheese is melted and the tortilla is crispy. Cut, garnish with the avocado, plenty of Taco Sauce, and serve! (You can make a second quesadilla with the remaining veggies or use them in a scramble for breakfast.)
