Spanish Gardens Chicken Fajita Salad

Who doesn’t love fajitas, right? Put all the deliciousness of the classic dish on a bed of crisp lettuce and discover a new way to enjoy them.

Ingredients:

1/4 cup ranch dressing
1/4 cup Spanish Gardens Taco Sauce (Mild, Hot, or Extra Hot)
1 tbsp olive oil
1 tbsp Spanish Gardens Taco Seasoning
1 chicken breast, pounded out to a consistent thickness
1 red bell pepper, cut into rounds
1 yellow bell pepper, cut into rounds
1 green bell pepper, cut into rounds
1 yellow onion, cut into rounds
green leaf lettuce
queso fresco
avocado

Instructions:

Combine the ranch and the Spanish Gardens Taco Sauce, and mix well.

Rub the chicken breast all over with the olive oil and Spanish Gardens Taco Seasoning. Use an outdoor grill or grill pan to cook the chicken, making sure to get those blackened edges. Quickly cook the veggies in the same pan (or grill), letting them get a little blackened too.

Toss the lettuce with the dressing (you won’t necessarily use the entire amount) then top with the chicken, peppers, and onions. Finish with queso fresco, avocado, and a little more Taco Sauce. Enjoy!
