Spanish Gardens Queso Chili
This chili is truly epic, with the addition of cheese and Spanish Gardens Taco Seasoning
Ingredients:
1 tablespoon extra-virgin olive oil
1 large bell pepper, chopped
1/2 large onion, diced
2 cloves garlic, chopped
1 tablespoon Spanish Gardens Taco Seasoning
1 teaspoon cumin
1 15-ounce can pinto beans, rinsed
1 15-ounce can diced tomatoes with green chiles
1 cup chicken stock
1/2 teaspoon salt
1 cup shredded cheddar cheese
2 ounces cream cheese, cubed
1 tablespoon lime juice, plus wedges for serving
Spanish Gardens Tortilla Chips & chopped fresh cilantro for garnish
1 avocado, cubed
Instructions:
Sauté bell pepper, onion, and garlic until softened, about 3 minutes. Add Spanish Gardens Taco Seasoning and cumin, cook, until fragrant, about 1 minute. Stir in tomatoes, broth, and salt. Bring to a boil, reduce heat, and simmer until veggies are soft and flavors have blended. Add beans and cook until hot.
Mix shredded cheese and cream cheese into the chili, stirring until melted and smooth. Stir in lime juice. Top with avocado and cilantro and serve with lime wedges, if desired. Serve with plenty of Spanish Gardens Tortilla Chips.
